TORONTO GAPS SUPPORT CLASSES - DATES TBD

Gut & Psychology Syndrome by Dr. Natasha Campbell-McBride is a gut healing diet program that has helped numerous people to reduce symptoms and feel better.
These classes will be lead by Certified GAPS Practitioners Janet Neilson, RN & Homeopath and Patricia Meyer-Watt, Holistic Nutritionist. The focus is on support and understanding of the diet principles and demo and discussion of how to prepare the healing foods that are encouraged in this diet.
CLASS TOPICS:
Class 1: How Disease begins in the gut. GAPS stocks, meat & veggies soups, equipment
Class 2: Gut and psychology/phisiology syndrome. Veggie ferments: sauerkraut, beet kvass, etc.
Class 3: The Full GAPS diet. Rendering fat, ghee, easy mayo, Hollandaise
Class 4: The Introduction Diet. Dairy fermentation: yogurt, kefir, sour cream, tips on non-dairy fermentation
Class 5: Detoxifying. Juicing, GAPS shakes, Sneaking superfoods into the diet of fussy eaters..
Class 6: Supplemens for GAPS. GAPS baking, crispy nuts, ice-cream. GAPS without dairy, eggs & other intolerances.
WHO SHOULD ATTEND? These classes are both for Holistic Nutritionist practitioners who want to use this diet with their clients and also for anybody who wishes to improve their own or a family member's health through diet. Nutritionists get upgrading hours for this course.

LOCATION: Holy Rosary Hall, 356 St. Clair Av. West, main floor, (Bathurst & St. Clair Av.). This is a square brick building immediately to the east of Loblaws. It is NOT in the Church.
TTC: St. Clair Ave. West Station, (important: walk towards south end of platform to St. Clair Av., not Heath St) walk 1 min east on St. Clair Ave.
PARKING: Free Parking for Loblaws Customers, walk 1 min east on St. Clair Ave.
FROM OUT OF TOWN: You may leave your car at Yorkdale station and take subway south to St. Clair West Station. Or take Allan Rd South to Eglinton, then South on Strathearn to Bathurst, south again on Bathurst. Turn left on St. Clair. Turn left into Loblaws parking.
COST $240 + HST if prepaid for all 6 sessions, $50 + HST if paid on Wednesday before class (e-transfers only) (single classes only if space available, preference will be given to those who sign up for whole session) Details on Registration form.
PAYMENT: by cheque or e-transfer
SCHOLARSHIP: Two half scholarships will be available to two persons who commit to help with set up and clean up for all sessions. Details on registration form and please e-mail us with your request. We will give preference to a person who could otherwise not afford these sessions.

VEGGIE FERMENTS & BUBBLY GINGER SODA - TBD 10am -12:30pm

• We will ferment veggies using wild fermentation and fool-proof fermentation with a starter. In groups of two, you will prepare vegetables for fermentation and take them home for fermenting. (Bring a one litre jar). We will make Gingery Sauerkraut, Spicy Kimchi and Daikon-Beet ferments. Bubbly Ginger Soda is a group Demo. We will prepare and eat a light lunch. You will take home all recipes, one jar of ferment and ginger starter.

DAIRY FERMENTS, COTTAGE CHEESE & KOMBUCHA - TBD 10 - 12:30pm

• Fermenting dairy is easy and safe! We will use Harmony Organic milk but raw milk or goat milk can be used too. We will prepare Kefir (a buttermilk-like ferment), Fil Mjolk (a delicious sour cream), discuss benefits of Kefir vs. Yogurt. We will prepare fresh cottage cheese (no brand is available in the market this fresh and without preservatives, etc) using a bacterial culture and rennet. Kombucha is a refreshing & bubbly fermented tea beverage with many purported health benefits. We will prepare buckwheat crepes, oatmeal pancakes, a berry-kefir mousse for snack and taste the fresh cottage cheese made in class. You will take home kombucha, kefir and Fil Mjolk starter.

2 PART - NOURISHING TRADITIONAL DIETS - Demo & Hands-on

A PRIMER ON TRADITIONAL NUTRITION - 2 sessions of 3 hours each
In this two part demo and hands-on cooking class, we will explore the foundations of a healthy and nourishing diet: bone broth, pastured meats, organ meats, veggies, proper preparation of grains, healthy fats & oils, dairy and veggie fermentation. We will start each class with some demo & discussion. Then the group will prepare a delicious lunch that we will all share. All recipes inspired by Nourishing Traditions, S. Fallon Morell & M.Enig. Max. 6 participants.

GLUTEN FREE, HEALTHY & DELICIOUS - Demo & Hands-on class

There are many gluten free products in the market these days, but are they healthy? We will discuss how to implement a healthy gluten free diet. What products to buy and which ones to make at home.
You will learn to prepare delicious gluten free meals, snacks and desserts. We will bake with nuts, seeds, coconut flour, buckwheat (a gluten free "grain"), etc. No rice flour will be used. Take home recipes samples and tricks to transform many recipes into gluten free.
The group will prepare a gluten free lunch and bake several gluten free items.

Hands-On cooking class: Healing diets class

HEALING DIETS: GAPS, ENZYME, CANDIDA - 1 class of 4 hours
In this class we discuss specific foods that help heal the gut, control Candida overgrowth, help with periodic cleansing and support those who are recovering from serious illness. Prerequisite: having taken Traditional Nutrition in the Kitchen or having a solid understanding of Nourishing Traditions principles. This is a gluten and grain free class.

HOME-FERMENTATION OF DELICIOUS "PROBIOTIC" FOODS - for medium to large groups
In this presentation, Patricia talks about the benefits of lactic-acid fermentation and demonstrates how easy it is to prepare these delicious foods. She will have samples available for participants to taste and there is lots of time for Q&A. If applicable, participants will take home starters required for some fermentations.
Topics may cover one or more of these: Feel good Kefir (dairy fermentation), Kimchi, Carrot & Ginger Sauerkraut, Kombucha, Ginger Soda, Pickled radishes, etc.
